Healthy Breakfast Oats

I love having oats for breakfast as they fill me up for hours after. If I have a bowl of oats like this I typically am not hungry again til the late arvo! I created this recipe this morning and it was absolutely delicious so wanted to share it with you! Let me know if you try it!

Ingredients

  • Half a banana chopped into slices

  • 1/3 cup of blackberries and blueberries (frozen or fresh)

  • 1/2 oats (not the instant pack, make sure it is 100% rolled oats in the ingredients with no extra sugars/salts)

  • 1 cup of almond milk/oat milk or regular milk if you prefer (you can also use water if you don’t like milk however might be less creamy)

  • 1-2 teaspoon ground cinnamon

  • 1 tablespoon chia seeds

  • 1-2 tablespoon crushed walnuts

  • 1 tablespoon crushed peanuts

  • 1 drizzle maple syrup / honey

  • 2 teaspoon coconut sugar/brown sugar

  • 1 big tablespoon organic unsalted peanut butter

Method

  • Place banana and coconut sugar in a small pot over low-medium heat. Once the banana is caramelised remove from heat and set aside - usually around 5-7 minutes max (make sure you keep stirring to make sure it doesn’t burn but don’t stir to hard otherwise the banana will become to mushy)

  • In the same pot add oats, your liquid of choice, chia seeds, nuts, cinnamon and any other dry ingredients here

  • Stir until the oats begin to bubble and all the ingredients come together to form a thick consistency. It shouldn’t be liquid-y anymore but it should still be moist and not dry

  • Put into plate of your choice and drizzle with honey/maple syrup

  • Top with fresh or frozen berries and caramelised banana

  • Enjoy with a side of coffee or tea in bed or in the sunshine :)
